With a fifty years in the food service industry, owner Tom Fussell strives to give the ultimate in flexibility and attention to detail in the planning and execution of your event. We have a wide array of resources to fill your needs including tent rental, flower purchases, a list of photographers, and procurement of DJ's or live music. We also have a virtually unlimited selection of table dressings and event set-ups, for as informal or formal as you would like.
In comfortable conferences, we at Paragon take you through the steps of
your event, encouraging your full input while offering a wide variety
of options on both the food and service ends of your party. We are committed

These
are a few menu samples meant to give you an accurate representation of
what our clients have come to expect from Paragon Catering. Please do
keep in mind that we are open to any menu suggestions and that these are
just a few of the menu options we are willing and capable of providing.

Buffet: Chilled
poached side of salmon topped with wafer thin cucumbers and
finely diced spanish onion; watercress-horseradish remoulade on
the side. Spinach,
Artichoke and Cheese Torta - flaky phyllo pastry, filled with
spinach, artichoke hearts, fresh herbs, mozzarella, fontina and
ricotta cheeses in a light custard, baked golden and served warm,
sliced in thin wedges Tuscan
Platter - A plate of roasted vegetables marinated in a balsamic
vinegar, extra virgin olive oil and fresh herbs including: sweet
red and yellow peppers, zucchini, yelllow squash, portobello mushrooms

Salad - penne tossed with scallions, sundried tomatoes, calamata
olives, parmesan cheese, holland peppers, in a fresh herb, sherry-lime
vinaigrette Salad
- mixed green salad (bibb, romaine, leaf lettuce) topped with diced
tomatoes: homemade ranch and herb vinaigrette on the side Fresh

Chicken
Tarragon Salad - poached, diced and plumped chicken breast blended
with tarragon, white grapes, toasted and slivered almonds with mayonnaise Sliced
